The confusion stems from the original report on NOLA.com, which offers the sentence "Greg Paulus was signed by the New Orleans Saints as an undrafted free agent," but that was premature (and never actually mentioned in the article, just used as a picture caption). The former Syracuse QB did try out with New Orleans over the weekend, though.

↵More than likely, Paulus, the 2004 Gatorade National Football Player of the Year in high school and the quarterback for Syracuse in 2009, won’t be the next college basketball player-turned-football star like Antonio Gates or Tony Gonzalez. He does, however, fit the mold of a Saints quarterback.
↵A lot is made about Drew Brees being just six feet tall.
↵Well, Paulus is six feet and ONE INCH tall. Super Bowl MVP here we come? Nah, he’ll settle for four or five Pro Bowls first.
